Is it ok to freeze a prime rib now for a few weeks then thaw for Christmas dinner? It’s on sale for 8.99/lb currently, over 50% off.

    Less air on the surface is best.

    Yes. I’d recommend vacuum sealing so it doesn’t get freezer burn. I’ve stored meat this way when I buy from the likes of Costco, etc.
    vacuum sealers IMO are a good investment I’ve honestly saved money by not having to throw away food and buying in bulk

    If you don’t have a vacuum press. Use Saran Wrap instead. Wrap it snug. No air in the wrapping

    Wrap the whole sumbich in butter. Butter age that mfer! No need to freeze and will be ready to cook by Christmas day!

    As a meat industry veteran, just save your money now. They will be on sale through Christmas Eve. Some stores may even have them a dollar per lb cheaper Christmas week because that’s when the bulk of their December sales are.

    It’s not about freezer burn. It’s all about the tissue being torn to shreds when the water freezes and expands into tiny knives. Then the meat loses all that moisture while cooking.

    I think you are better off dry aging. It’s safe and delicious.

    It’s okay safety wise but frozen meat won’t be as good after you thaw it back out. Try to freeze it dry and well sealed.

    Yes, wrap it well, freeze it, thaw in your refrigerator for at least 24 hours before you plan on cooking, bring to room temperature before you pop it in the oven and season it.

    I vacuum sealed a prime rib, and served it a year later. With close friends who would have shared if they felt it was less than excellent.

  21. For all the “that’s Choice not Prime” comments-Prime Rib is the cut not the grade. Choice Prime Ribs are still delicious.

    Yup, just put the entire package (as is) into a 1 gal freezer bag first. It’ll keep for months!

    If I find a good deal, I marinate it first and wrap it tight with some of the liquid. This makes it less tough & dry, & saves prep time later, if you aren’t too picky. Probably not the best method, but it’s what I do.

    Also, the USDA established the Prime grade in 1941. Do some people think prime rib just didn’t exist before then?

    DO NOT BUY CHOICE!! Spend the extra money for PRIME grade. Go to Costco. And ideally, do not freeze – buy it the day before. But I know it may not be practical, so freeze if you must — GET PRIME grade, not Choice.

    If it were me, I’d dry brine for 24 hours, then vacuum seal it before freezing.

    Yes you can freeze it and by the way Choice is fine. The marbling looks good in the picture. If you have a vacuum sealer repackage it before freezing. We do this all the time. We buy a whole boneless rib roast and I cut it into 2 inch steaks, then seal and freeze them. One steak is perfect for my wife and I to share, and we have some left-overs for a steak sandwich later.

    To the idiots: The cut is Prime. The grade is Choice.

    To OP: Yes, you can freeze it. It will be fine to thaw for Christmas but won’t be as awesome because the meat fibers will have broken down.
