120g prawns
1 medium aubergine, finely diced and microwaved for 7 minutes on medium
50-70g passata
2-3 cloves garlic
Basil
50g fregola
Minute 1-3: Start by chopping aubergine and put it in a bowl or plate, loosely cover with a lid or another plate
Minute 3-10: Microwave aubergine for 7 minutes. Meanwhile roughly chop garlic and stir fry in a pan with oil spray
Minute 10-25: Add aubergine, passata and fregula, stir fry for 3 minutes, add water little by little and cook like you would risotto. Garnish with basil.
