    Totally ruins the dynamic of the flavors in a BLT. Now it’s more of a cheese sandwich with condiments.

    Bacon is really salty. I find that goat cheese and fig really balances it out. For a fancy BLT do arugala with goat cheese, fig, cherry tomatoes on a buttered sourdough toasted bread. Don’t knock it til you try it.

    A cafe near me used to make a sandwich called the BLTCE, which is what you made except with an over medium egg added. I would put one of those down at least once a week.
