This is such a quick and delicious meal. It is important to use a very good olive oil for best flavor. To pack in more flavor, you can top the salad with chunks of a hard cheese like provolone or reggiano parmigiano.

Ingredients:
1 can albacore tuna water packed – drained
1 celery stalk diced
½ red onion diced
¼ cup pitted Kalamata olives pitted and chopped
1 tsp fennel seeds
1 tomato sliced
¼ cup Extra virgin olive oil
2 cups arugula washed
Juice of 1 lemon
Salt and pepper to taste

Steps:

1. In a bowl add the tuna, celery, onion, olives, and fennel seeds.
2. Add the olive oil, salt, pepper, and fresh lemon juice.
3. Taste – if too dry sprinkle more olive oil. Adjust the salt and pepper.
4. Arrange the arugula on a plate. Add the tuna fish. Garnish with the sliced tomato.
