I tried the Dutch oven process for caramelized onions, ended a bit drier than preferred but the flavor was spot on, served with (slightly overcooked) duck breast, but still happy with the result

    The good thing about duck breast is that even if you overcook it, that shit has so much fat it probably still slapped
