My absolute favorite way to enjoy turkey. Cured in a maple sugar brine for 5 days, dried on a wire rack in the fridge overnight, rubbed down with duck fat and my Maple Sweet Heat rub, and then smoked for 2.5 hours starting at 250F and slowly increasing to 400 at the very end.
