Maple brûléed brussels sprouts with bacon jam, crispy pancetta and balsamic glaze
Serves: 4
You’ll need a blowtorch
Bacon jam
* 2 tsp vegetable oil
* 2 red onions, finely diced
* 3 garlic cloves, minced
* 400g smoked streaky bacon, finely chopped
* 100ml white wine vinegar
* 200g caster sugar
* 4 tsp maple syrup
* 5 sage leaves, roughly chopped
Brussels sprouts
* 300g brussels sprouts, trimmed and halved
* 30g unsalted butter
* 4 tsp olive oil
* 4 tsp honey
* 4 tsp maple syrup
* 3 tbsp brown sugar
Balsamic glaze
* 300ml balsamic vinegar
* 150g brown sugar
Rosemary crumb
* 2 slices stale sourdough bread, crusts removed and roughly chopped
* 2 garlic cloves, peeled
* 4 rosemary sprigs, leaves picked
* 3 tbsp vegetable oil
Garnish
* 100g diced pancetta
* 5 sage leaves
* 30g unsalted butter
Method:
* Preheat the oven to 170°C. Sweat the onions and garlic in the oil over a medium heat until soft, then add the bacon and cook until crisp
* Deglaze the pan with vinegar, then add the caster sugar, maple syrup and sage. Stir well, then cook down gently until the liquid has reduced
* Spread the sprouts over a lined tray and dot around the butter. Drizzle with olive oil, honey and maple syrup. Roast for around 25 minutes or until tender and browned
* Bring the balsamic vinegar and sugar to a simmer, then leave to reduce for around 10-15 minutes until sticky and thick
* Blitz the sourdough, garlic and rosemary to a crumb in a food processor and season with salt and pepper
* Fry the crumb in the vegetable oil over medium heat until toasted
* Fry the diced pancetta until crisp, then set aside
* Heat up the butter in a pan over medium heat. Once foaming, add the sage leaves and fry until crisp
* Sprinkle the cut side of the sprouts with brown sugar and use a blowtorch to caramelise the sugar
* Spoon the bacon jam in a line down the centre of each plate, then place the brûléed sprouts on top. Finish with a sprinkle of the rosemary crumb and garnish with crispy pancetta, sage and balsamic reduction
