    Steak needs LOT of salt. Also let it sit and soak in the salt for at least 45 minutes at room temperature before you cook it. You can reverse sear it. Put in oven at 300 for 15-20 minutes til fat renders, and then sear it in a scorching hot pan on either side til a nice crust develops.

    Is it possible they have high blood pressure or cholesterol and need to cut back on salt? People are often embarrassed to say why they want less salt.

    I once heard it said to put an uncomfortable amount of salt on your steaks to ensure good flavor. That’s what I go with, anyway.

    So if this was like letting it rest and draw out moisture over time then you are correct. Then after that before you grill, you blot and wipe it down taking away some but leaving a reasonable amount of salt, season it with others, and grill. But if it’s just season and grill, your dad’s is more in line. You want to leave room for other seasoning to also grip the meat. You then massage it into the meat. That way those larger crystals are spread more thinly and create a nice crust.

    Use kosher salt instead of sea salt. Add also where’s the pepper. Garlic powder adds another element.

    Let second one sit in fridge for 48 hours, then in the oven at 220 for an hour, then a quick psshhh psshhh searing both sides on a hot hot pan. Thats the ticket.
