Steak needs LOT of salt. Also let it sit and soak in the salt for at least 45 minutes at room temperature before you cook it. You can reverse sear it. Put in oven at 300 for 15-20 minutes til fat renders, and then sear it in a scorching hot pan on either side til a nice crust develops.

This seems pretty easy to solve.

Is it possible they have high blood pressure or cholesterol and need to cut back on salt? People are often embarrassed to say why they want less salt.
Latter-Camel8241
Yours is correct.
drace_edge
I once heard it said to put an uncomfortable amount of salt on your steaks to ensure good flavor. That’s what I go with, anyway.

You are almost maybe kinda halfway there. Your dad is light years off

Needs that much salt. But also equal amounts of fresh ground pepper.

So if this was like letting it rest and draw out moisture over time then you are correct. Then after that before you grill, you blot and wipe it down taking away some but leaving a reasonable amount of salt, season it with others, and grill. But if it’s just season and grill, your dad’s is more in line. You want to leave room for other seasoning to also grip the meat. You then massage it into the meat. That way those larger crystals are spread more thinly and create a nice crust.

Impressive_Maybe343
Use whatever makes the consumer happy.
Used_Wrongdoer2429
Use kosher salt instead of sea salt. Add also where’s the pepper. Garlic powder adds another element.

Y’all need even more salt. Cover that bitch. Then let it sit for at least 30 mins. Then **rinse it off**, season the steak and cook it

Enough salt to see it from across the room. I don’t remeber where I heard it, but that’s my motto

By the time I’m done with the S, P, and Garlic Powder the steak is basically begging for mercy. Tell dad and GF they ain’t eatin.
