








So Ive been mulling over how to make normal people eat an onion lovers special. I think I nailed it….
Caramelized onion Japanese curry gravy.
Smothered over a double thick pork chop.
The dark roux I used for the gravy has a ton of onions. I then fold in heavily caramelized onions into the curry before smothering the chop with it. Green onion garnish. Side of Japanese pickles (tsukemono) which I added my own spicy kombu pickled onions to.
There’s pics of both ways I plated it. I ended up going with the sauce on the bottom with carmy onions on top, as to not hide the nice pork.
They are eating the equivalent of one whole large onion per plate- assuming they finish it.

Onions and pork are a match made in heaven. I love making an onion-apple gravy with my pork chops. I call it grown-up applesauce.
Looks great. Definitely not something you would commonly see in Japan, but I would straight up devour it.
