  1. Bolognese

    2 tablespoons extra-virgin olive oil

    1 medium carrot, grated

    3 ribs celery, minced

1 medium yellow onion, finely minced

    1 pound 80/20 ground beef

    1 pound ground pork

    1 (24-ounce) jar store-bought marinara

    1 teaspoon kosher salt

½ teaspoon freshly cracked black pepper

    ½ cup heavy cream

Freshly grated parmesan cheese, for serving

    Carbone’s vodka sauce

    ½ white onion diced

1 Calabrian chili pepper finely minced

    4 garlic cloves

    ¼ cup tomato paste

    ¼ cup vodka

    1 cup heavy cream

    1 cup reserved pasta water

    ⅓ cup Parmesan cheese

    salt to taste

I basically just combined the two and added in cherry tomatoes, spinach, and caramelized onion.

    10/10

Looks nice. You already have all the ingredients that would go into a real “marinara sauce” or “vodka sauce.” Just leave out the store-bought sauces and use plain canned tomatoes instead. You’ll get rid of the random shit they add in those and get a fresher taste.
