Process shot from this morning's bake.

What you see here is 33 (of 136!!! 🥵🥵) English muffins fresh out of the oven, not yet stacked on the cooling rack. My process is very efficient, sandwiching the muffins in between two pans and flipping the paired pans halfway through the bake. I'm able to do 33 at a time using half sheet pans. The crumpet rings in the background help keep the muffins separated and supports their final shape.

You can see the first batch cooling on the rack in the background. 🙂
