We’ll start with the preparation method and ingredients. Preparation method: You get the toast. You see this toast? The hard, dry toast. Now, there are different thicknesses. This is the very thick, small toast. This comes in a large square shape, and it also comes in a thicker shape. You can use that. You get the dish you’ll be cooking in. A Pyrex dish is preferable if you have one. If not, any dish will do. This dish doesn’t need to be baked. You arrange the toast in it like this. We put it in two layers, as I told you, because it ‘s thin. This is Aish El Saraya. It was an Ottoman dish. They used to make it for the sultans. Now, you are the sultans, so this is an Ottoman dish. Aish is bread, as we said. Our people in Egypt say that “Saraya” is a well-known dish. ” Saraya” refers to palaces, and it was eaten by sultans. It was served in royal or sultanic palaces. The dish is very well-known in Egypt and is found in many other countries, including Syria. So, after we finished preparing the bread, we arranged it in this dish like this. We put it in two layers. If you have larger toast, then it will be one layer. Now, it depends on the type of toast. The toast needs to be hard or dry. There are soft toasts, not hard, dry ones. You can find them in supermarkets or anywhere else. Now we’ll start preparing the syrup. We have a cup of sugar. Measure it with one measuring cup, which is the drinking cup. Use one measuring cup to measure it, depending on the size of the dish you put the bread in. We used a very large dish, enough for six people. So, we put a cup of sugar in the measuring cup and added half a cup of water. One cup of sugar and half a cup of water. Dissolve the sugar as you see. Put it on the stove, of course, put it on the fire and start stirring until the sugar dissolves. Now it will start to boil, so add half a teaspoon of citric acid or lemon salt, or the juice of half a lemon, whichever you find suitable for the syrup to thicken. Stir it for about five minutes until it starts to boil. As soon as it starts to boil, look at this: the syrup is finished, meaning it’s ready. Turn off the heat and take the bowl. If you let the syrup cool down a little, it’s fine, or if it’s hot, it’s fine too. Now pour the syrup over the dry toast as you see. Why are we putting the syrup on top of them in the first place? So that the toast sticks together. Now what happens? The toast sticks together, and the syrup soaks into it and binds it together, giving it a sweet flavor when you eat it. Let it cool down. Okay , so we’ve added the syrup and that’s it. We’ll set it aside, whether it’s hot or cold, to prepare the sauce. Now, using the same measuring cup, take five cups of milk. We’re working with it cold here; we haven’t put it on the stove yet, not on the fire. So, five cups of milk require five tablespoons of sugar. These are the tablespoons: five cups of milk, five tablespoons of sugar. Now, we’ll also take five tablespoons of cornstarch. Okay, all cold. We’ve added five tablespoons of sugar, five tablespoons. Now, we’ll stir. Keep stirring cold until the sugar and cornstarch dissolve completely, without any lumps. Stir gently until they’re fully dissolved. You’ll find the mixture is all well combined. Now, we’ll put it on the stove. Keep the heat medium. We’ll put it on the stove and stir. Now, the milk will start to heat up. It’s just beginning, at about 30-40 degrees. Now, you’ll get… Mastic, mastic, you add a little sugar to it, you know it, mastic is well-known, you add a little sugar to it and grind it and add it to the milk, it gives a wonderful flavor. This cream is ready-made, you can find it in stores. Why? To increase the fat content of the milk. Now if you have full-fat milk, you don’t need it, but here it’s to increase the fat content of the milk so it becomes thicker. This dish is for those who like sweets and it’s a dish fit for royalty. Now we continued stirring, the cream dissolved completely in the milk and it reached this stage. You see its consistency, it became thick. It freezes immediately, so we need to work on it now. At this stage, we need to work quickly. After it reaches this stage, you add the orange blossom water essence (the essence of the orange blossom water). We put four or five drops, and as soon as you put it in, you turn off the heat underneath. Because if you continue to leave the food on the stove after adding it, it will give it a bitter taste. So, we’ve added it. You just hold on for a couple of simple movements, then you turn off the heat and take the pot off the stove. That’s it. Now we go to the bowl we made the toast in and pour the milk over it. This is how you lower it quickly; it sets quickly because it’s hot right now. You lower it while it’s still hot and smooth it out evenly on the surface. That’s how you lower it; it needs to be evenly distributed. It sets quickly, so don’t keep smoothing it and feeling it.
