Here’s how to make the easiest
tomato soup without using a pot. Fill two-thirds of a
baking sheet with tomatoes, then one quartered yellow onion, a few slices of bell pepper and
a couple halved heads of garlic. Cover everything with
your favorite olive oil I’m using the Osmo Roasted Garlic Oil as well as a generous sprinkle of salt, and then toss this in the oven to bake
at 400° Fahrenheit for about 35 to 40 minutes or until it looks like this. Squeeze out the garlic and then
scrape the bottom of your pan to pick up any extra bits of flavor. Then add everything to a pot along with a
bit of fresh basil and blend until smooth. Finish by adding an optional splash
of heavy cream and season to taste. I like to eat mine with some
good old grilled cheese.

  3. Add ndjua to the soup, garnish with feta cheese, baby spinach and crème fraîche and you are set!

  4. I consider myself a pretty good cook. But I’ve never made a homemade tomato soup that is better than a can. Similar with spaghetti sauce. Anything tomato, just buy it.
