Roasted Veggies, Roasted Potatoes, Marinated Chicken and Yogurt herb dressing,

Marinated the chicken breast cut into chunks in a mix of (1/3 cup greek yogurt, 1/4 cup olive oil, juice and zest of 4 lemons, 4-5 cloves garlic, 2 tbsp oregano, 1 tsp kosher salt, 1/2 tsp pepper) Overnight if possible, but a couple hours will do. Bake on a cookie sheet at 400° until cooked through.
Veggies: red onion, peppers, and cherry tomatoes. Dice the onion and peppers, toss in avocado oil, garlic, salt. pepper and zaatar seasoning, roast at 400°C until the tomatoes burst and veg is cooked through
Potatoes: Cubed, then tossed in avocado oil, lemon juice, lemon zest, garlic, oregano, salt, pepper and zaatar seasoning. Bake on a cookie sheet at 400° until fork-soft.
Add a bit of each to a bowl. Serve topped with dressing (attached) and crumbled feta.
Dressing: Finely chop the garlic and herbs, and mix all ingredients
