[homemade] soy garlic chicken thigh with marinade turned into sauce

    Marinade: soy sauce, 4/5 minced garlic cloves, seasoned rice vinegar (mild and sweet)
    chicken thigh deboned and butterflied, let sit in marinade for at least 2 hours (this thigh had sat in it for about a day)
    cooked in stainless steel pan for maximum crisp.
    the sauce: take marinade, tbsp butter, a lil honey, and a lil sweet soy sauce if you have it. let it cook and simmer until it gets thick, pour over chicken.
    best with a bowl of rice

    Looks good, but if you’re using the same marinade the chicken was in, it needs to be heated to the same temperature as the chicken and held there for at least a few minutes to kill bacteria, otherwise it’s unsafe to consume. Ideally, boil it for at least 5 minutes. Better yet, make extra of the marinade and set it aside to avoid contamination.
