    Next time add a little more liquid, so the natural sugars in your onions don’t carbonize as much. You’ll get a slightly sweeter taste and more depth of flavour from the onions themselves.

    Also, deglaze with red wine for 2-3 mins before you take the onions off and add the broth to simmer.
