    I smoked some last weekend and used Meat Chuch “Gospel” on them and they turned out great. However, I pulled the skin off.

    I use the Vortex ring thing on my Weber when making thighs. Cook them to like 125 around the ring and then move three at a time directly over the center to get them up to 180.

    I use my pellet, i smoke at 225 and go to about 125 then crank up heat to 325 get that fat render and crispy skin. I pull thighs about 175-185 its fine with the fat. This works great for me try it out.
