Anyone able to tell me what cut of elk meat this is? The butcher only wrote "elk" on this package.

Those are fresh elk shanks (the lower leg of the animal) and you need to make a big old steamin tub of oxtail soup with those immediately. Make sure to coat those in olive oil and sear both sides on high so you can create a glorious fond to deglaze. Also, a bottle of drinkable Malbec to pour in there would be magical. Look up a good recipe for oxtail soup and just sub those. You won’t be disappointed.

Those are 100% shanks. Great braising cut in dishes like osso bucco. I know you didn’t ask, but: seasoned flour dredge – sear until brown – sautee some carrots, onions and celery in the bottom of that pan – deglaze with a little wine – add some tomato and stock – and simmer until fork tender. Serve with a risotto, you won’t be disappointed. I like to cut the sinew on the outside of the muscle in a few places before I sear so it doesn’t curl up and evenly browns at that first step.

Like others have said, it’s shank/leg.
I made Birria with a whole shank last week. De-boned it and roasted the bones separately. Cubed up the meat and seasoned, browned, and then set aside. Made a killer guajillo chili sauce, deglazed my pot, and then threw everything into the slow cooker several hours.
