
How can I process with recipe but with Quart jars?
I have a recipe on an online book from ball but it’s for only 1 quart .
Apple pie recipe
INGREDIENTS
12 cups sliced, peeled and cored apples*
2-3/4 cups sugar
3/4 cup ClearJel® cooking starch
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2-1/2 cups unsweetened apple juice
1-1/4 cups cold water
1/2 cup bottled lemon juice

You can’t make this recipe in quart jars. You are always allowed to go *down* in jar size (with the same processing time a the larger jar) but you are never allowed to go up.
You said that you have a recipe from Ball online that gives directions for quarts, but it only makes one? You can scale that one up. ClearJel is different than pectin, it’s okay if you double or triple the recipe.
The NCHFP pie filling recipe has all the same ingredients and options for 1 qt or 7 qts.
I just made this a couple weeks ago and it’s yummy.
