
Made a nice sauce using tomatoes from our garden with porcini mushrooms. Below is my recipe for meatballs. Many use a blend of ground beef, ground veal and ground pork but in these days I take a more cost effective approach. Heck, even the cost of beef alone is out of hand. Benedetto’s Meatball Recipe
2 lbs 80/20 ground beef
1 small onion diced
2 cloves garlic
2 slices bread soaked in milk
2 tbsp of your sauce
2 eggs
¼ cup Parmesan
¼ cup Pecorino
1 tsp dried basil
2 tbsp chopped parsley
Salt to taste
Instructions:
-Sauté onion and garlic until soft. Blend until smooth.
-Soak bread in about ½ cup milk until fully absorbed; mash by hand.
-In a large bowl, combine the ground beef, cheese, eggs, basil, salt, onion/garlic mixture, and soaked bread. Mix gently until well combined.
-Form meatballs and brown them in a frying pan.
-Drop browned meatballs into your sauce and simmer 25–30 minutes until fully cooked and tender.
