Cooked this bad boy on the top rack ‘til it hit 118°F. Rested for 10ish minutes while the grill heated up (it was around 30°F out). Then slapped it on the sear burner. Came out perfect!

    You make it sound so simple lol I reverse seared twice but now I just air fry all my steak.

    Ya, this is perfect for me. And I agree with the cold. Can’t explain it but some of my best cooks have been a winter bbq.
