The restaurant stands out for its philosophy, aimed at celebrating Capitoline tradition with meticulous attention to raw materials. On the one hand, the fried Bollito Meatballs accompanied by salsa verde; on the other, the Parmigiana di Melanzane baked in the oven with San Marzano DOP tomatoes and 30-month Parmigiano Reggiano.

Among the first courses, Roman classics dominate, prepared with superior artisanal pasta (such as Benedetto Cavalieri), including Rigatone alla Carbonara (with fresh eggs, Deroma pecorino cheese and DOL guanciale) and Spaghettoni all'(A)Matriciana.
