My first neapolitan pizza. Do you have tips for leopard spotting?
How did I do? I still need to practice with my new tentazione oven

Looks like a great first try. What is your dough recipe? What kind of stone is in your Tentazione, is it the biscotti one? I think it’s just a little more practice in shaping/stretching and perhaps moving your pizza to a different spot when turning if you’re not satisfied with the bottom leoparding.

400 degrees celcius.

leopard is done with a very hot temperature (450°c) by sear the dough. The bubble appears very quickly, and the thin skin burns first.
