Today I’m going to cook. I buy them leaves. They are dry. I’m going to soak them in the warm water or the hot really hot water. Then again, I put clean water and I cook it till fully cooked and I put some bay leaves and the cinnamon stick with it. And we have to keep washing till we get rid of this brownish color. We have to keep washing and squeezing them till we see that the water is clear. After we still need to keep soaking them every time, 10 minutes till we see that the water is clear. Now, this was the first 15 minutes of cooking the chicken. This liquid I’m going to throw out and put fresh water. And that’s the water that I’m going to use. Here is my fresh water again with the chicken that I cooked a little bit before with the bay leaves and the cinnamon stick. We’re going to keep cooking till they’ve coo completely cooked. Here I’m still squeezing the mui to get rid of the brownish color. And then see it’s still we’re going to keep cleaning washing them till it’s clear. I have six small onions. I’m going to cut them into small pieces here. You see that it’s clear, almost clear. So, we’re fine now. Going to squeeze them and put them on the side. Soaking them about seven to eight times, okay? In the hot water and leaving them for 10 minutes each time till the water became clear. And now we’re going to start cooking them. For spicing, we have one teaspoon of cinnamon, one half teaspoon of hot pepper, and half a teaspoon of nutmeg, and half a teaspoon of hot pepper. And here we have about 3 tablespoons of olive oil and about uh a slice of butter, you know, about a slice thick of butter. First, we’re going to start cooking the onions. During this time, I’m going to start taking the chicken, putting them on the side, and get rid of the bone and use the liquid. Now, we’re going to add the garlic. This is about three heads of garlic. I cut them, put them on top of the onions. And now, two bunches of cilantro, washed, cleaned, and cut. And now this liquid going to go to the greens and the garlic and the onions. Before adding them, we squeezed about four lemons. We’re going to add them here and let them cook for 1 minute maybe or two. Now we’re going to add them here. And the last step is adding the chicken. Let it cook for maybe 15 minutes and we’ll be done. You could serve it with rice on the side. For cooking the rice, you could put about a bunch of vermicelli before putting the actual rice. This is cooked with butter till it becomes golden color. Here it’s ready to serve with the rice. Okay.
