  8. Our Pedro was named Ishmael and he was a prep gangster and worked salad station on Sundays. He was a delight to work with. Always happy and absolutely obsessed with the playboy channel. I always loved asking him what he was doing after work as his answer was consistently β€œGo home, take a shower, watch playboy channel”

    All it takes to make good food is to give a shit, the speed and skill will come over time, but age has nothing to do with it, I was cooking dinners by 10 years old, you just have to want to do it and do it well.

    I only comment when it warrants it, I’m either specific, “tell whoever grilled this salmon that it’s perfect”, or “let BOH know that my meal was A+”. Never mention Pedro by name, or the chef.

    I’ll keep saying it until I’m blue in the face but it doesn’t matter how old you are, how much experience or education you have, if you are the one running the kitchen, you ARE Chef
