Started to blush so took it off the vine before the birds got it. Variety is mortgage lifter. Some splits in the blossom scar from growth surges after heavy rain but plenty more to come.

That green tomato likely wont taste as good as a fully mature red tomato. I mean you can eat it now, but it will be more firm and harder to work with. That is a big tomato indeed. I can see why you harvested it early. Yes those birds do go after tomatoes occasionally, but the ones you really have to look out for are not birds but insects. Especially slugs.

Unless you want to make something that requires green tomatoes it should ripen if you put in a bag with a banana for a few days to kick start the process. Then just leave it at room temp until ripe.
