Has anyone successfully recreated a thick, “Salty Cream” foam for a matcha latte under 100 cals?

It was from a place called Broken Coffee in Vegas. The foam was incredibly thick and had this savory/salty kick that balanced the sweetness perfectly.
But I assume the original is probably packed with heavy cream and sugar.
**Goal:** The plan is to recreate this experience as a matcha latte protein shake for my daily driver.
**My Inventory:** I have unflavored protein powder (WPI), pea protein, oat milk, allulose, and pink salt at home.
Could you help me identify what natural ingredient I am missing to get that thick, spoonable texture? (Maybe Greek yogurt?) I’m trying to keep the ingredients simple without making it a calorie bomb.
