My written recipe:

6.5g of Protein in each small (~20g) cookie.

78.4g of Protein per batch of cookies

(Protein Sources: Almond meal = 12.4g, Protein powder = 48.6g, Plant milk = 2.4g, Peanut butter = 15g)

Vegan Choc Chunk Protein Cookies (Makes 12 small cookies)

Ingredients:

1/2 cup (60g) Almond Meal

1/2 cup (60g) Vegan Protein Powder

1/3 cup (83ml) Plant Milk

1/3 cup (85g) Peanut Butter

1 tsp (5ml) Vanilla Extract

1/2 tsp (2g) Salt

25g Dark Chocolate

Method:

  1. Preheat the oven to 180C or 390F.

  2. Add the almond meal and protein powder to a bowl and stir to combine.

  3. Pour in the plant milk, add the peanut butter, vanilla and salt. Mix to form a dough.

  4. Take a spoonful of the mixture, press it together in your hands and shape into a disc. Place on a lined baking tray, repeat with all of the mixture. Should make around 12 small cookies.

  5. Roughly chop the dark chocolate, lightly press a few pieces into the top of each cookie.

  6. Bake for 15-20 minutes or until the edges of the cookies are golden.

  7. Enjoy this high protein snack, great to put in your lunchbox or to have after going to the gym.

  4. Lovely video/ recipe.
    It can be gf ( depending on protein powder)?
    Also, is the protein after baking same ? ( not degrading with heat)
