Casa Fiore’s Cucina presents…#128
Coniglio alla Cacciatora
“Hunter-style Rabbit”
Fresh from the Farm!
Uncommon Ingredients Inspire Deliciousness in the Cucina
What do you do when you’re handed some home-grown rabbit?
You eat it, for goodness sake!
I recently visited a 5-acres small farm in the glorious farmland between Snohomish and Monroe that I helped my clients and friends purchase in early 2024. I was blown away by the transformation: chickens, ducks, bees, koi ponds, greenhouses, outbuildings and shelters, Shetland sheep, exotic cows, rows of new trees, brand new siding (the steep cost of which we successfully negotiated during the purchase!), and a brand new country kitchen – most all of it prodigiously constructed and curated by my friends themselves!
As we said goodbye, they handed me a quart of luscious honey and a generous portion of home-raised rabbit.
Uncommon ingredients inspire deliciousness in the cucina…
And so, my imagination went to work…!

What do you do when you’re handed some homegrown rabbit? You eat it for goodness sakes. [Music] [Music] Inch by inch, toe by toe. Eagle going fast, snakes moving slow. Yellow and green bean. Head up high going to make seove from Kazafior Cooina also known as Cafe Fifi. I have these wonderful clients who have now become friends and they bought a 5 acre piece of land out in Snowomish. It’s so beautiful and what they’ve done there blew my mind. And when I went to visit, they were so kind and they gave me some beautiful fluffy rabbit for dinner. H I’ve had rabbit before. I’ve cooked with it, too. But tonight, I’m making my own version of Cornelio. Come on, let’s go. blood pure as hell. We’re going to start by simmering some garlic, some freshly chopped rosemary, and some freshly chopped sage. [Music] Now, we’re going to add our rabbit legs, and we’re going to brown them by turning up the heat just a little bit. Now that they’re lightly brown on one side, we flipped them. We’re going to brown them on the other. We’ll now delaze the pan with about a half a cup of red wine. About a half a cup of pureed tomatoes, and a shake of red pepper. [Music] [Music] Don’t stop it. Don’t start it. Just keep going. Got it. Keep this. Don’t do it. I know what I’m doing. Now I’m pissed. [Music]
