Awesome! This is the first time I’ve seen someone on the internet make homemade chocolate and actually use a melange to get a smooth end result. Every other video I’ve seen they just use a grinder and I guarantee the end result is gritty. But this looks fantastic.

Is there a part of the cocoa seed proccessing/chocolate making step that smells like wet garbage? I have been noticing a wet garbage smell around my office recently which coincided with a chocolate making facility going in next door.
