Salted and spiced overnight, bagged with butter, then Into a 131ºF bath for 28hrs. Finally seared over a blazing hot charcoal grill and thinly sliced with my $18 eBay slicer. Pretty darned impressed with eye of round.

    I’ve got a Bosch slicer of around the same vintage, except one part of the guard system got warped in the dishwasher 🙁

    Works fine without, though I may cut off a fingertip at some point. Well, between this and the mandolin my chances are pretty high.

    You ever slice frozen beef really thin and make cheese steaks?

    I did one, and it made one of the best sandwiches I’ve ever had.
