My colors rarely turn out how I wanted. Thanks in advance for your advice!

    Green and yellow. And if its too vivid of a green add a drop of pink.

    I made pistachio macarons the other day! I used like 2 drops of green and 1 small drop of yellow from the Satin Ice 10 count gel food colour set. I lamented on how dark green they were and then of course they turned into that lighter pistachio green.

    If it’s a matcha macaron, just using matcha in the dry ingredients gets you this.

    If it’s not, I’d recommend using powdered water soluble food coloring. I use sugar art master elite. You can add little amounts at a time until the exact color is achieved.

    I doubt anyone will be able to give you exact measurements since it all depends on batch size and how the color is displaying on the precise screen they’re viewing the image on. Also not everyone even measures their color. I never do, I just add grains of powder until it looks right. For this, without matcha, I’d use green, some yellow, and a hint of red to neutralize it.

    Keep in mind that your macarons may brown/fade when baking, depending on the temp you bake them at and how evenly your oven distributes heat. I always make my batters more vivid than I want. I bake at 305F.
