So, I’m very proud of this cake since it’s the first time I’ve done a lot of these techniques, but some behind the scenes:

– Didn’t make enough frosting the first time around. Recipe made about 3.5-4 cups and I thought it would be enough. Wrong. I had to make a whole second batch.

-I didn’t fill the layers properly, so I had to go back and patch it with globs of frosting.

-The icing started hardening after I applied it to the crumb coat, while I was still trying to smooth it, so it started tearing. I cried and had to sit down, then remembered the advice about running my spatula under hot water. It worked.

-Once I got the base situated, the rest was fine. I’m a perfectionist and can see all the ways it’s rough around the edges, but I’m overall happy with it.

-The other side of this cake is not decorated at all, I was absolutely tired after everything so I just made it look good for a pic, cut myself a slice, and sat down. The verdict? It’s a tiny bit dry, in my opinion 😭 but the frosting is great!

love what you did with the clouds and the colors are so soothing. it will get easier and easier each time you do it and you will get faster and faster with each learning opportunity. i usually use sugarologie.com cakeculator to calculate how much frosting i need if this helps you.

Crying is my favorite brain reset tool. If I’m stuck on something and particularly frustrated, I find zero shame in having a good cry and coming back with a cleaner brain slate
