I was really looking forward to trying some good ramen in a Japanese-themed place, and it was amazing! The cook told me it has approximately 500-600 calories and over 30g of protein

That looks delicious! I believe that the calorie count is accurate… But I would say watch out for the sodium. That’s where they get you!

JINYA ramen has calorie counts on their menu and they’re all 1200-1300 calories. This one probably is too. Or more.

There is no way that is 600 cals. Just the eggs and noodles alone are about 600. Then the fat in the broth, the fish, rice cakes, and other flavourings would be at least another 400.

No way. You can see the oil glistening on the surface of the broth. Pho is 600 calories, though!

Hey OP, if you liked this it’s likely shio ramen. Kenji Lopez goes over how to make it here (https://www.seriouseats.com/shio-ramen-bowl-recipe) although his bowl is 650. You could omit the added schmaltz to lower the fat and sub it with chicken breast to get the protein up.
Japanese cooking is really good at stuff like this, I highly recommend folks look at their food for ideas!
