Mediterranean Style Strawberry-Burrata Salad

Ingredients:

* 1 ball of fresh burrata or you can use feta or mozzarella instead
* 1 cup fresh strawberries, sliced or cut as desired
* 1.5 cups mixed greens
* A handful of fresh mint or basil
* 1 tbsp olive oil (for tossing strawberries)
* Pinch of salt
* Few roasted pistachios to garnish.

For the Roasted Pistachio Dukkah:
* 1/4 cup pistachios, shelled and unsalted
* 1 tsp white sesame seeds
* 1/2 tsp coriander seeds
* 1/2 tsp. Fennel seeds
* 1 tsp cumin seeds
* Pinch or two of black pepper powder
* salt to taste
* 1/4 tsp. Red pepper flakes (optional) or paprika powder

For the Dressing :
* 1 – 1.5 tbsp Pomegranate Molasses or balsamic vinegar
* 1-2 tsp honey or hot honey
* 1 tbsp. lemon juice
* 1/4 tsp. Lemon zest
* 1.5 tbsp extra virgin olive oil
* Pinch of salt
* Dash of pepper

Method:

* Dry roast pistachios for 3-4 minutes on medium heat and set aside.
* Dry roast sesame seeds, coriander, fennel and cumin seeds for 2–3 minutes until aromatic.
* Cool it slightly and roughly pound it in a mortar & pestle or pulse in a grinder. Keep it course and don’t powder it.
* Add black pepper , chilli flakes and salt to taste. Set aside.
* Whisk together pomegranate molasses ,honey ,lemon zest , lemon juice, olive oil, pepper and salt until emulsified.
* Toss the strawberries with a drizzle of olive oil , a spoon of dressing, 2 spoons dukkah and a pinch of salt.
* On a serving plate/bowl, lay the mixed greens. Add some dressing and give a gentle mix .
* Spread the strawberries over the greens.
* Sprinkle generously with the roasted pistachio dukkah.
* Tear burrata pieces and spread as well or add feta cheese.
* Add mint or basil leaves.
* Drizzle the dressing over everything.
* Garnish with few roasted pistachios or pumpkin seeds.
* Optional: garnish with edible flowers if you feel fancy.
