




Week one of the diet and I am still learning as I go. My food pics are not nearly as pretty as some of them I see on here!
The first night we did roasted eggplant parm sandwiches on whole grain bread with a sliced heirloom tomato, mozzarella, and a pesto spread, with a big salad on the side with a lemon honey vinaigrette
Night 2 was a Moroccan chick pea stew over quinoa with a piece of pita and hummus
Night 3 was a baked salmon with roasted veggies and quinoa
Breakfasts have been avocado toast with tomato and everything bagel seasoning, an egg cooked in olive oil, and a piece of whole grain toast
Lunches have been roasted veggies galore this week.
How am I doing? It’s definitely not perfect yet, but does it seem like I’m on the right track for portions, balance, etc?

I’d stay away from sandwiches although salad could make up for it. I am guessing you are going to be high in carbs l, low in protein relative to typical MD targets.
Looks excellent!! If you want an easy addition to your rotation, you could also add sheet pan veggies! Tons on recipes online, and they’re super easy.
Hey OP! Dietitian here- your meals look so yummy! Balanced, colourful and a great variety to keep your taste buds excited.
My only tiny suggestion would be to get a bit more protein at your breakfast and lunch. I know protein is hot right now, but there are lots of great options that don’t require powders or bars. For example, you could roast some shelled edamame with your roasted veggie lunch, scramble 1 egg with a 1/3 cup of boxed egg whites, you could throw a dollop of greek yogurt on top of your fruit, mash your avocado with some white beans!
Careful, some posters here might confuse you for an influencer!
Meals all look great. I salute your commitment to heirloom tomatoes during these trying times (early winter).
The fourth picture looks a lot like my average breakfast. And now I’m getting hungry!
