    ##*CHRISTMAS PUDDING*
    2 oz. plain flour
    ½ level teaspoon baking powder
    ¼ level teaspoon salt
    ½ level teaspoon grated nutmeg
    ¼ level teaspoon cinnamon
    1 level teaspoon mixed spice
    3 oz. sugar
    ½-1 lb. mixed dried fruit
    4 oz. breadcrumbs
    2-4 oz. suet or fat
    1 level tablespoon marmalade
    2 eggs, fresh or dried
    ¼ pint cold tea

    Sift the flour, baking powder, salt and spices together. Add the sugar, fruit, breadcrumbs and grated suet or melted fat. Mix with the marmalade, eggs and tea and turn into a greased basin (2 pint size). Cover with greased paper and steam for 4 hours. Remove paper, cover with a fresh piece and a clean cloth and store in a cool place. Steam for 2-3 hours before serving.

    ½-¾ lb. mixed dried fruit
    4 oz. apples
    3-4 oz. sugar
    2-4 oz. suet or melted margarine
    2 level tablespoons marmalade
    ½ level teaspoon mixed spice
    ½ level teaspoon cinnamon
    1 level teaspoon grated nutmeg
    ¼ level teaspoon salt
    ½ teaspoon lemon juice or lemon essence
    A few drops of rum essence

    Chop the dried fruit finely and grate the apples. Mix all the ingredients together thoroughly. Put into small jars and tie down securely. Store in a cool place.

    If the smaller quantities of fruit, sugar and fat are used, this will not keep for more than 10 days.

    ##*CHRISTMAS CAKE*
    4 oz. margarine
    3 oz. sugar
    3 level tablespoons warmed treacle or syrup
    8 oz. plain flour
    ½ level teaspoon bicarb. of soda
    Pinch of salt
    1 level teaspoon mixed spice
    1 level teaspoon cinnamon
    2 eggs, fresh or reconstituted
    1 lb. mixed dried fruit
    3 tablespoons cold tea

    Cream the margarine and sugar together and beat in the treacle or syrup. Sift the flour, soda, salt and spices together and add alternately with the eggs to the creamed mixture. Add the fruit and mix in the tea. Turn the mixture into a 7″ thin, lined with greased paper, and bake in a very moderate oven for 2½ hours.

    My mother used to serve something very similar, accompanied by a “ hard sauce” which was a cross between whipped cream and frosting that had hefty portions of brandy or rum in it. It was my favorite part of the dessert!
