I like crispy skin, and this is a travesty to me 🙂I make skin-on salmon in a bit of a silly way to enjoy both seared flesh and crispy skin.Start in the pan, flesh side down (presentation side).Flip to the skin down and cook until it’s browned.Slide a flat metal spatula (fish spatula does not work well here with its lip) under the flesh, scraping along the skin. This removes the skin.Remove the crispy skin and finish cooking to your desired temp. Continue cooking the skin if not crispy enough.Scarf down the skin like a hungry dog before you finish cooking dinner 🙂

I make skin-on salmon in a bit of a silly way to enjoy both seared flesh and crispy skin.
Start in the pan, flesh side down (presentation side).
Flip to the skin down and cook until it’s browned.
Slide a flat metal spatula (fish spatula does not work well here with its lip) under the flesh, scraping along the skin. This removes the skin.
Remove the crispy skin and finish cooking to your desired temp. Continue cooking the skin if not crispy enough.
Scarf down the skin like a hungry dog before you finish cooking dinner 🙂
