Ingredients I am using: 2 pounds black mussels, washed, cleaned, and opened up but making sure not to break them apart, 1 pound of calrose rice washed and drained, 1/2 cup avocado oil, 2 teaspoons black pepper, 2 teaspoons cinnamon, 2 teaspoons of sugar, 2 teaspoons allspice, salt to taste, 1/2 cup roasted pine nuts, 1 cup raisins, 2 1/2 cups boiling water, 1/2 cup fresh chopped up dill, 2 1/2 cup chopped up onions, and lots of love. Hi everyone. Welcome to Loving Living Purposely Kitchen. Today we are going to prepare a delicious dish. I showed you guys last year how to prepare this, but since the holidays are coming up, um we usually I usually cook this um for Christmas. So, I’m decided to make it earlier and show you guys one more time. All righty, let’s get started. black muscles, onions, chopped up onions, pine nuts, black pepper, sugar, salt, allspice, cinnamon, raisins, fresh dill, the rice is washed already, and half a cup of avocado oil. Heat up a pan, add the oil, and once the oil is is ready, we are going to add the onions to caramelize them. Add the onions. And we are going to caramelize them. Okay, this should take about 10 to 15 minutes. It has been about 10 minutes and I am getting ready to add the rice. We’re going to cook this for about 5 minutes on a medium low heat. And then we’re going to add the rest of the ingredients. So after 5 minutes, I’m going to add the rest of the ingredients. I’m going to add the black pepper first. Then we’re going to add the salt, all spice, cinnamon, sugar. I have two tablespoons here, but I’m going to just add one. I don’t want it to be too sweet because we are adding also um raisins. So, I added the black pepper, allspice, sugar, cinnamon, um salt, and we’re going to mix this very very well. And the next thing we’re going to add is going to be the braces and the pine nuts. The rice is looking nice and toasty. I also added the pine nuts and the raisins and give it a good mix. I also added my boiling water enough to cover the rice. Make sure to taste it. At this point, I’m going to add just a little bit more salt. Just a little bit, not too much. Okay. And we are going to let this cook for 1 minute. And then we are going to turn it off and cover it. Let it cook with this on the steam for about 20 minutes. And then we’re gonna um move on to the muscles. It’s been about a minute. So, what I’m going to do now is I’m going to turn it off and we’re going to cover it and let the steam do its magic for about 20 minutes. Let’s turn it off. It has been 20 minutes now. I’m going to mix it a bit because we’re going to add the dill now. We’re adding the fresh dill. Okay, as you can see, my muscles are clean and I removed the beard that they have in the middle opened up. And then what you do is you stuff them. You can do it with your hand or with a little spoon. And I have a little pot here ready with the ones that I’ve that I’ve stuffed already. I’m done stuffing them. So, I put about 2 and 1/2 cups of boiling water and I put a plate so they don’t open up, so they don’t expand. A rock. This rock, I use it for this purposes all the time. So, I have it in my kitchen all the time with me. We’re going to cook it for 30 minutes on a medium heat. Okay, make sure it’s closed on a medium heat for 30 minutes and we’ll be back.
