    (2) The meal – picked up Chin-Su Soy Sauce at H Mart yesterday and it’s my new obsession now

    (3-5) Opened tin – yes, we needed 2 can openers for this tin: we started with my electric can opener and finished with a handy-dandy Vietnam-era US military issue P-38

    (6) My newest bowl – from the H Mart in Dallas squeeee

    (7-8) Making a cucumber salad that I put in the fridge to marinate and forgot about (oops). Chin-Su Soy Sauce is my new obsession

    (9-14) Making the eel rice: 2 rice cups Jasmine rice, 1 tbsp grated fresh garlic and ginger paste, water to the 2 line, eel tin sauce, eel, I had 1/4 c of Crying Man Sichuan-spiced bamboo shoots taking up space in the fridge, so I decided to throw them in. Eel rice can take any kind of miscellaneous assorted add-ins and be DELICIOUS! I added a splash of Chin-Soy sauce for salt, maybe 2 tsp. Hit the button and wait for the magic to happen!

    (15) My favorite way to eat eel rice is to top it with an over-medium egg. Sooo yummmmm

    (16-17) I wanted a little more Sichuan heat and numbing, so I stirred in a spoonful of Crying Man Preserved Fungus (Wood Ear Mushrooms). Yea, I have all the Crying Man pickles. They are all delicious IMO

    (18) Broccoli dressed with roasted sesame oil and – more Chin-Su.

    What I live best about eel rice is you can add almost anything to it and it will be delicious! It’s perfect for using up those bits and bobs in the fridge – in this case, bamboo shoots and some wood ears. I thought about it adding the broccoli too, but decided I’d make it a side dish instead.

    I love this tin of OF roasted eel, even though I know my electric can opener can’t handle the shape, so P-38 is required.

    I encourage every tinned fish lover to stop by an Army-Navy surplus and get a couple 3-4-5 of these for uncooperative sardine tins. I also keep one in a camping box and one in the car just in case. They’re less than $1 at the surplus store, few dollars more at Wally World, and a LOT more at REI.

    This eel has a light sweet sauce with just a hint of Sichuan 5-spice, which is why I always add more Sichuan condiments or spices to it. The flesh is moist with a medium-jerky texture, so I like to rehydrate it in soups or the rice cooker. It also does well as a topping for hot rice.

    11/10 will buy this tin again. It’s worth the extra P-38 effort to open it 100%!

    oh my, that looks delicious! 🤤 might need to break out the ol’ instant pot to try making this… also gonna keep an eye out for that soy sauce!

    the old school can openers really take me back – my mom was a pro & made it look effortless, but i was never able to figure it out until i was an adult 😂 I’m still not great with them lol

  7. I always love roasted eel. I always get the black bean one because it’s $0.20 cheaper at my Asian store for some reason. The black beans are nice too.

    I’ve used the ‘juice’ in my rice cooker, but never thought throwing the fish in with the rice would work well. Does it not change the texture or steam out the flavor?
