Making appetizers for a holiday potluck: caramelized onion, fig spread, goat cheese & crispy prosciutto puff pastry cups… figured I would just do all the onions I had on hand- 8 organic sweet yellow onions and 2 shallots 🤪 thanks to my lovely fiancé for peeing and quartering the onions. Opted for using the food processor for mostly tear free slicing- many many hours later … success!

I wish I could afford to buy enough onions to carmelize. But with the price of food now, I can’t even afford meat!🤷
