Looks delicious. Question for those who know: Why does thickness of sashimi slices vary so much depending on the chef when nigiri almost always has the same slice thickness?
I don’t think it’s a money thing because when I go to a place that slices it thick they tend to just charge more per slice. You can usually tell how thick they’re going to be just from the price per slice. Am I overthinking it and it just doesn’t really matter? I tend to prefer thin slices myself.
