i had cabbage that needed to be used but i waited too long and im high and still wanted slaw so i did this. it’s good as is but it’s missing something.

    If it’s got enough acid, it either needs a pinch of sugar, or more salt, or both.

    You’ve got savory on savory on acid on salty. A little sugar to balance it out is a good idea. That, and a splash of something like red wine vin would be ideal. The hot sauce you mentioned would have some vinegar but a good flavorful vin like rwv would be perfect. It will also help soften the veg.

  8. Salt. I don’t want to assume how much you do or do not know about food, but SO SO many people in my life, just do not season their food adequately. The ingredients do look good, I’m thinking you just may need some more salt.

    Maybe a ciabatta or garlic naan might pair well.

    Edit: saw onion roll was suggested, which I think is a terrific idea.

    If the question is “What does this recipe need?” and the first answer isn’t “More salt!” because it already has enough, the next answer is “More acidity!”.

    Try adding some lime or lemon juice, or some red wine or white wine vinegar, or apple cider vinegar.

  12. Touch of sugar and some grated carrot. Grate the carrot after the cheese so the carrot kind scrubs the grater and it’s easier to wash.

    Shredded cabbage. But not enough to turn it back into coleslaw, just a little bit

    A small squeeze of lime or lemon if you have it. I’ve noticed it gives that acid but much more neutral flavor versus using full vinegar. I’ll still use RWV but I do make it a point to add in the squeeze of lime or lemon to cut that taste. I hate when you add vinegar then have to go back and add everything else because the vinegar overpowered

    Time, perhaps. Every slaw I’ve made tastes much better after a night in the fridge.

    I would say more black pepper and a touch more salt to start with, along with a little red wine vinegar as someone else suggested. Just a dash at least to brighten up the other flavors.

    Lime or lemon juice would be a fun way to add a little more acid as well.

    Usually sugar. That was my problem the first times I made slaw.
