


Here’s my first loaf! Any tips or suggestions would be appreciated.
I tried following Beginner Sourdough Bread recipe from Little Spoon Farm. 50g active starter, 350g water, 500g bread flour. I did 3 sets of stretch and folds 30 minutes apart. Fermented in 65° room for 15 hours. Shaped and left in the fridge over night. In the morning I baked it in the preheated Dutch oven at 450° for 20 minutes with the lid on, 25 minutes with the lid off. Cooled for about 1.5 hour before cutting into it. It’s a bit gummy on the inside. Unsure if it’s underbaked, cut open too soon, or something with the proofing/fermentation?
