Frittatas are great because they’re pretty easy to make but impressive enough to make for company, or meal prep for a healthy breakfast throughout the week!
You can use whatever vegetables you prefer, I used asparagus and mushrooms for this one.
Sautee your veggies for about 5 minutes in a 9 inch cast iron skillet over medium heat with a little olive oil.
In a bowl, mix together:
12 eggs
1/2 cup milk
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
optional 1 cup shredded cheddar cheese
Pour the egg mixture over the sautéed veggies, and bake at 350 for around 35 minutes or until cooked through. Top with chopped chives.

Once upon a time, a guy wanted a breakfast that was pretty enough to serve to people, but easy and healthy enough to eat throughout the week for himself. So, he maxed out his credit card, buying enough eggs to use 12 in this frittata. He used milk, some garlic, salt, and pepper, and whisked it all together to make a nice little mixture there. Sauteed up some asparagus, and mushrooms, poured the egg mixture into a cast iron skillet, and then baked it. And thus, the frittata was born. Sliced into eight gorgeous slices.
