
It tastes so good! I made two loaves (gave one to my mom, so not pictured), so this is a recipe for two.
Ingredients:
900g white bread flour
100g whole wheat flour
750g water
200g starter
20g salt
180g dried cranberries (soaked in orange juice for a couple hours, drained after)
Orange zest (from three oranges)
Cinnamon (no measurements, just sprinkled it on)
Process:
I mixed the flour and water. Autolysed for one hour. Added starter and salt, then let it sit for 10 minutes. 10 minute stretch and folds, then let it sit for an hour (in the oven with the light on). After that, I did three stretch and folds at one hour intervals. During the stretch and folds is when I slowly added the cranberries, orange zest, and cinnamon. I cut the dough in half. Pre-shaped, let them sit for 30 minutes. Finally, I shaped them, and put them in the fridge overnight. Baked them about 12 hours later. Covered at 500°F for 25 minutes, uncovered at 450°F for 20 minutes.

Sounds and looks absolutely heavenly!! I’ve never tried it in bread before but orange and cranberry is a top tier combo so I don’t doubt your loaf doesn’t only look gorgeous but is incredibly tasty as well!!!
I just mixed up two today. My favorite! It makes fantastic french toast by the way.
I make one like this but instead of cinnamon I use cardamom. So good!
