    Not OP but here’s my recipe. I guess the real secret is using pimento wood for the smoking.

    3 bunches of spring onions

    2×4 inch piece of of peeled ginger, or 6tbls ginger purée

    1 head of garlic, peeled

    1 bunch fresh thyme

    4tbls of ground allspice powder (or 1/8 cup whole allspice berries)

    2tbls crushed cloves

    2tbls ground cinnamon

    2tbls ground black pepper

    2tbls sea salt

    Half cup brown sugar

    1 cup white vinegar

    1 cup neutral oil

    Juice from 8 fresh limes

    1 scotch bonnet pepper. (You can use habanero, because you can’t find scotch bonnet peppers (I’m growing my own actually)) now you can adjust this to like 3 peppers if you want authentic hot jerk; or you can deseed and devein them. I use half a pepper fro when I make it for crowds.

    Combine all ingredients in a large food processor or blender and blend until it’s the consistency of thick mud. Apply to chicken, to coat and let it marinate for 24-48 hours. Grill that shit.

    I always feel sad when I see jerk chicken, because it is one of my favorite meals on earth, but so many corners are cut, or really bad cuts of chicken at all of the places here. One place does it right, but its 20$ for a bowl of red beans and rice, a meager amount of chicken and 3 small plantains.

    And I wanna make it myself and I can probably get close with just a baked chicken, but I cant have a smoker due to hoa. I went on a family vacation to Jamacia and had it on the beach there and it was memory forming. I want to ride that high again!

    It looks delicious and you did it justice with the pimento wood. I hope it tastes just as good, hope you had all the awesome sides with it.
