Just picked this up for $900, anybody have some tips on using it?

    Do some chicken thighs to get the hang of it temps wise. What experience do you have with smoking?

  2. Best all around cooker I’ve ever owned.

    Grilling is no different than a Weber kettle.

    For smoking, two pieces of advice. First, when starting it up, load the charcoal basket and get it going with a small amount of lit coals off to one side. If you dump in too much lit coal your going to get thick crappy smoke due to not having enough oxygen for your combustion.

    Second get a cheap 18″ grate to stick on top of your heat diffuser so you can put a drip/water tray on it without burning it up

    Man, real nice deal on that table unit! I’ve had the standalone unit for a while and love it. Smokes, grills, cooks pizza, whatever.

    I use a fireboard temp controller and a pit viper fan when smoking, so it’s almost as easy as a pellet grill. I use lump charcoal (usually jealous devil) for everything. When smoking, i bury a few chunks of wood. I light the charcoal with a single starter cube. Once it’s lit, I put the diffuser plate on, set the controller to my temp, close the bottom vent, make sure the top is just cracked and let it come to temp. Sometimes I’ll open it up and pop another piece of wood on top of the coals before putting food on.

    Someone already mentioned the expander grate, which is a great add. I like the vortex cone for doing chicken thighs. Helps turn out some nice chicken and you barely have to pay attention.

  5. These are great. Replace my 22” kettle and Smokey mountain. Both have sat idle for 2+ years. This can do it all IMO

  6. be prepared for the casters to come off with time if your backyard is not very flat. otherwise it is a great bbq

    I bought one this summer. It’s hella easy to use. You can watch some YouTube videos to see what people do, but you just fill it with charcoal, get it up to temp, and smoke away. Once you dial in the vents, its almost set and forget unless you’re dealing with hella cold and wind. If you want to grill, you can adjust the grate height. But I also know a lot of people just fill up a chimney starter and have that going on one side for direct heat. I’ve only grilled on mine a few times and forgot to adjust the height every time, so I just built a bigger fire on one side and it was fine. Before you start cooking, get a 400° fire going for an hour to burn off manufacturing residue and also season your grates with ghee or avocado oil using an onion, preferably.

    Use a chimney starter. Try to achieve the same temps as your pellet smoker. Learn about having a hot and cooler zone.

    My smoker is 8 feet long it is also a 36 inch wide & .500 thick with a 2 foot fire box and a tandem axel trailer.
