I just received this cut of beef for free from a local deli that was closing down. I forgot to ask the butcher what cut it was. Can anyone identify what it is?

    You’ve got bone in ribeye there. You can cut between the bones for rib roasts or thick rib steaks. Alternatively you can cut along the bones, remove the rack of ribs, and then cut into boneless roasts and steaks.

    This looks like ribeye to me. Great choice! You can cut this into individual steaks, or cut 2-3ribs out and make an xmas roast. I suppose if you were really ambitious you could try to cut out a slab of beef ribs

    My friend, this is around a $300 piece of beef. What you have there is called a Ribeye Primal.

    The best thing you can do with this cut is to slice in between the ribs for some ribeye steaks. You should also seriously consider leaving the center 3 ribs together, and making a prime rib roast for Christmas.

    Whatever you do, be sure to dry brine the steaks the night before, and the roast 2 days before.

    Example:
