Guys, let’s make white bean minestronei. I like to use the white beans instead of pasta. That way, when there’s leftovers, the pasta doesn’t soak up all the broth. So, I’m going to start with my olive oil. Coat the whole bottom of my pan. Then, I’m throwing in this shaved garlic. That’s going to flavor the oil. It’s just going to slowly infuse. I’m on a medium heat. Then, I take this pureeed garlic and I add that in as well. That’s going to cook them much quicker. So, we’re going to get our vegetables in there. Carrot, celery, onion. Just stir that around for a second. and we’ll add our zucchini and yellow squash. Another quick stir. It’s time to season. So, I’m going to start with kosher salt. Put a big old pinch. Then, we’re going to go in with some cracked black pepper. That’s our starters. Next, I have some fresh herbs. I’m using a mix of rosemary and thyme. Then, we do our dried spices. I have basil and I’m using some Italian seasoning as well. That’s going to be perfect for this. We finish with a couple of bay leaves. Give that a nice stir. Get those herbs, spices all mixed around. Then we’re going to go ahead and add in our stock. I’m just using some base today. And I use a mix of both chicken and beef. Half and half. Go ahead and put that in there, guys. That’s perfect. We’re going to add our white beans at this point. Give that a little stir. We’re going to let that come to a simmer. And as soon as it does, I’m going to throw in my marinara. That’s going to be perfect. Now, we’re going to let this go on a hard boil for about 15 minutes. That’s it. So, let me show you how we plate this. We’re doing soup and salad today. So, I got some nice fall greens. I follow that up with my creamy Italian dressing. And I’m dropping that recipe tomorrow. It’s going to be on kevoskitchen.com. Super delicious. Little bit of cucumber, tomato, and croutons. And that’s my salad. Now, we grab a bowl. We load it up with the soup. And the finisher is a little pinch of parmesan cheese, guys. Mini soup. and salad.   5. I love noodles in my minestrone. What I do is just make the noodles separate and just add them to the soup for each serving. That way the leftovers don't have those goopy leftovers texture
